This Creamy Chicken Pesto Pasta recipe looks and tastes as good as any fancy restaurant meal. This is one of those pasta dishes that your whole family will love. A great recipe for special occasions or easy weeknight meals.

While this is an easy dinner option with simple ingredients, sometimes I can't find fresh basil leaves to make my own pesto. as much as i lovehomemade pesto, there's no shame in using store-bought pesto. My favorite brand is Kirkland as it tastes super fresh.

  • Chicken: I used boneless, skinless chicken breasts cut into bite-sized pieces, but chicken thighs can also be used.
  • Pesto-Sauce: You can make homemade basil pesto or use store-bought pesto, making this recipe even easier to make on busy days. A good quality pesto sauce is a must! I prefer fresh pesto, which is sold in the refrigerated section of the supermarket.
  • Onions and fresh garlic:Any type of onion will work, but I prefer brown, white, or yellow onions. This recipe uses both fresh garlic and garlic powder.
  • oil: You can use any mild oil, but I prefer olive oil.
  • broth: Chicken broth or broth, regular or low-sodium. Vegetable broth can also be used.
  • Flour: I use all-purpose flour.
  • Butter: My favorite way to cook is with unsalted butter, but if you only have salted butter, you can do that too.
  • Half and half: Half and half makes a richer sauce than whole milk, but you can substitute half and half if you prefer.
  • Parmesan cheese:Freshly grated parmesan is always best.
  • Spices: Garlic powder, Italian spices, salt and ground black pepper.
  • Pasta: Any normal pasta will work. Short ribbed pasta holds the creamy sauce better than most pasta. Penne pasta, fly pasta, cavatappi, and rigatoni are good options. Besides short pasta, spaghetti is always a pasta that comes to my rescue at home.

How to Make Chicken Pesto Pasta

  1. Bring a large pot of salted water to a boil and cook the pasta al dente according to package directions. Reserve about 1/2 cup cooking water and drain the pasta.
  2. Meanwhile, while the pasta cooks, season the chicken with Italian seasoning, sea salt or Kosher salt, and black pepper, then dust with flour and toss to coat.
  3. In a large skillet, fry the chicken until golden brown, then remove from the pan. Put aside.
  4. In the same pan, melt the butter and sauté the onions until translucent. Add the garlic and cook for a minute.
  5. Add the broth to the pan and deglaze by scraping the bottom with a wooden spoon. This will remove the brown bits stuck to the bottom of the pan.
  6. Add the pesto, half and half and garlic powder and let simmer. The sauce will start to thicken a bit.
  7. Return the chicken and any collected juices to the pan. Simmer for a few minutes.
  8. Stir in the Parmesan cheese and mix well.
  9. Add the noodles and toss gently. If you want a creamier consistency, add a little cooking water and mix well.

Ingredients

  • 1 Pound Boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and ground black pepper to taste
  • 1/2 teaspoon Italian spice
  • 1 tablespoon all purpose flour
  • 1 tablespoon olive oil
  • 1 tablespoon Butter
  • 1 klein Onion, chopped
  • 4 Garlic cloves, chopped
  • 1 Taxes chicken soup
  • 12 ounces Basilikumpesto
  • 1/2 Taxes half and half
  • 1/2 teaspoon garlic powder
  • 1/2 Taxes parmesan cheese
  • 8 ounces Noodles *See Notes
  • Chopped basil for garnish (optional)

  • Bring a large pot of salted water to a boil. Add the noodles and cook according to package directions. Reserve 1/2 cup cooking water, then drain.

  • While the pasta is cooking, season the chicken with salt, pepper, and Italian seasoning. Add the flour and toss to coat.

  • Heat the oil in a large skillet over medium-high heat. Add the chicken and cook, stirring occasionally, about 5-7 minutes or until browned. Add additional oil if needed. Remove from the pan and store.

  • In the same pan, add the butter and sauté the onions for about 3 - 4 minutes or until translucent. Add the garlic and cook for a minute.

  • Deglaze the pan with the chicken broth. Scrape the bottom of the pan to remove the brown bits. Bring to a boil. Stir in the pesto and reduce the heat. Add half and half and the garlic powder. Simmer for about 2-3 minutes.

  • Return the chicken and any collected juices to the pan and toss to coat. Simmer for 3-4 minutes. Stir in the Parmesan cheese and mix well.

  • Add the cooked noodles and toss gently. Only add a little cooking water if you want a creamier consistency. Serve warm garnished with chopped basil (optional).
